Blue Bottle Coffee at 75 Varick Street Lobby

Blue Bottle, a third-wave coffee shop founded in 2002 in San Francisco, opened its 75 Varick Cafe on October 9, 2018, with a 15-year lease. The cafe was designed and built as part of a larger lobby renovation program at 75 Varick Street and throughout the Hudson Square Properties portfolio.

Third-wave coffee, a term coined in the late 1990s, is a movement supporting the production of high-quality coffee. This involves improvements at all stages from coffee plant growing, harvesting, and processing, to stronger relationships between coffee growers, traders, and roasters, to higher quality and fresh roasting at times called “microroasting”, and skilled brewing.

Blue Bottle opened their first New York location in 2010, and now has outposts from the Upper West Side in Manhattan to Park Slope in Brooklyn. At the new 75 Varick cafe, they are again focused on creating a social space where people have the option to slow down and enjoy an excellent cup of coffee.
